Eilish McLoughlin

General Manager & Head Chef.

"I graduated from Fermanagh College of Further Education in 1986 with a City and Guilds qualification in Culinary Arts. In the 80s it was common practice for young graduates to emigrate in search of work and new experiences so I headed off to London. I lived there for 5 years, working in and studying the food industry and gaining valuable experience. I loved London and still return to visit whenever I can, but my heart was at home in Co. Longford.

My culinary skills were well developed by 1999 so I embarked on a course of study in Catering Management and 2001 I also completed a NVQ Level 3 Patisserie and Confectionery course under the guidance of Neven Maguire.

In 2003, I built a HSE certified kitchen and started up my outdoor & events company called Dial a Chef Catering Ltd. Over the past 17 years, it has grown steadily and is now a key employer in the North Longford area."

Sarah Keogh is a CORU Registered Dietitian with a degree in Human Nutrition and Dietetics from Trinity College in Dublin

Sarah Keogh


Sarah Keogh is a CORU Registered Dietitian with a degree in Human Nutrition and Dietetics from Trinity College in Dublin.

She has worked as a dietitian in hospitals in Ireland and the UK and set up her own clinic in Dublin in 1998 providing one-to-one advice on all areas of nutrition including weight management, sports nutrition, fertility, heart disease, and gut health.

Sarah is very familiar with the difficulties people can have in managing a healthy, balanced diet and is working with EatSmart to help develop healthy recipes, meals and meal plans that anyone can enjoy.

Sarah brings her extensive nutrition expertise to Eat Smart, helping people to manage a healthy way of eating and
helping to bring a wealth of balanced nutrition knowledge to you with regular blogs and updates.

My name is Ryan Francis,

I currently run and own my own Gym / Training Facility, where I run Personal Training, Group Fitness Classes and Mentoring.

I operate 6 Days a week, running from Monday-Saturday.

All my group sessions are open to all members of the public, both young and old and also from the unfit total beginner to the advanced athlete.

I am a Qualified Personal Trainer/Group Fitness Instructor/Speed & Agility Coach/Kettlebell Instructor and also a Strength & Conditioning Coach.

My journey started about 6 or 7 ago I found myself very unfit and very overweight, and I was anything but the picture of health. I quickly realised I was eating all the wrong foods for example eating fast food and drinking tons of fizzy drinks along with drinking alcohol on a regular basis. I decided to do something about it. I immersed myself in a new lifestyle and have never looked back since.

It wasn’t easy to make necessary changes at first, but learning about the benefits of Metabolic Training and HIIT entirely transformed my body. What I enjoy the most about it is, that there is minimal or even NO equipment required and you can do it anytime and anywhere.

While I was in the process of achieving my own personal fitness goals, I researched a lot, which began the process of me getting my necessary Qualifications, I knew this is the career path I would like to take in life.

Not long after achieving my first few qualifications I embarked on a new phase, which was getting to understand different people and their needs. 

This is when I started my very own “Free Community Fitness Project”.

Every evening I would train large groups in HIIT Cardio and Movement Classes, My community fitness project ran for around a year and a half when we decided to move back to Ireland.

I decided to open up my own Gym / Fitness Classes. I’m very passionate about helping others find happiness in life and feel good about themselves. I believe that when you FEEL GOOD, you excel in life.

I make it a goal to help you achieve a happy and well-balanced lifestyle that will minimize the risk of future health-related issues.  I have found using Eatsmart meal plans as a convenient way to maintain a good healthy balanced and nutritional diet when I am too busy to home cook .

Eatsmart allows me to plan healthy meals weekly in advance and I know that I will be satisfied with the taste and quality of the meals delivered. I realize how being overweight affects many aspects of your life, I’m here to be your personal guide on every step of the journey.
